Naturally gluten-free bases

Rice, potatoes, sweet potatoes, quinoa, corn and legumes allow you to build complete menus. Some ideas are chicken and pumpkin risotto, corn tacos with fish, quinoa bowl or tortilla with potato and vegetables.

Recipe: legume pasta with chicken

Cook certified chickpea pasta, sauté zucchini and carrot, add chopped chicken and finish with cooked tomato and olive oil. Adjust quantities and texture to the guideline. The same sauce works with rice if you are looking for a milder option.

Cross contamination matters

Separates boards, toasters, strainers and oils; Store ingredients closed and label. In a club, the protocol must be written and known by the entire kitchen team. “Gluten-free” is a process condition, not just a list of foods.
